Balsamic Mozzarella Chicken with Basil Pesto Squash Blend

Preheat the oven to 400F. Toss squash, zucchini, and tomatoes with oil, salt, pepper, then roast for 30 minutes. Heat fillet and set aside. Once the vegetable medley is cooked, toss in pesto sauce. Top the vegetable medley with the fillets and fresh mozzarella slices.
