Cilantro Lime Dressing:
In a blender, combine garlic, cilantro, lime, salt, and slowly drizzle in oil to make the dressing.
Heat the Pollo Asado on the flattop until internal temperature reaches 165°F and set aside.
In a serving bowl, add cilantro lime rice as the base. Layer on lettuce, black beans, roasted corn, and Pollo Asado. Drizzle with cilantro lime dressing. Top with Pico de Gallo, sliced avocado, and crumbled queso fresco.
