In a large skillet, heat a little olive oil over medium heat. Add the onion and cook until softened. Add the butter, garlic, and flour. Stir until combined and slightly bubbly. Deglaze the pan with the white wine, scraping up any browned bits. Slowly whisk in the chicken stock and cook until the sauce begins to thicken. Stir in the cream and Dijon mustard. Season with salt and pepper. Add the spinach and cook until just wilted.
Meanwhile, cook the chicken on a flattop or skillet, then slice into ½-inch strips. In a large pot of boiling salted water, cook the ravioli until al dente. Drain and add to the sauce, tossing to coat.
Serve topped with sliced chicken, fresh basil, and grated Parmesan.
